Interview with Kathryn Amatriain from Southern Recipe Small Batch
LCG Foods sat down with Director of Marketing, Kathryn Amatriain, and asked her some questions to better understand the brand's mission, core values, and other topics that we thought our retail partners might want to know.

What motivated you to start your company and create the products that we see today? In 2015, we saw a need in the marketplace for a better pork rind. Knowing the truly great nutritional profile of pork rinds, we set out to develop a pork rind for today’s shoppers. This included a focus on new and unique flavour profiles, but also health benefits. We decided to cook our pork rind in sunflower oil and remove all artificial ingredients. Along with this adventure, we made a connection with low-carb and keto dieters. We became their salty, crunchy snack of choice for their new dietary lifestyle!
What are your company’s core values? As a family-owned and operated company, we take pride in providing snacks you feel good about sharing with your loved ones. We hope to provide the best-tasting and quality products to your family.
If you could tell a retailer three things about what makes your brand different, what would they be? 1. Owning our manufacturing makes us an ideal partner. We believe this is demonstrated not only in our products' quality but in the our quality of service, too. 2. We’re the category experts - we’ve been making the best-tasting pork rinds since 1955! 3. Our flavour profiles are truly innovative to the market. We like to think we can provide our shoppers with snacks as unique as they are!
What are some challenges you've had to overcome to bring your business to its current state? Educating shoppers and consumers about pork rinds. While the snack is common in some regions of the world, they are entirely new to some. This is exciting as an opportunity to share the surprising facts about how great pork rinds are. They are a savoury, low or no-carb snack, naturally gluten-free, and are a source of collagen protein. They also are very versatile, making a great chip replacement and can be used in countless recipes to make them more low-carb friendly.
